For dinner we had the regional potato and cheese side dish Aligot. It tasted delicious and unfortunately I had to have it replenished. The stuff is heavy on my stomach - I could not sleep all night.
Recette Recipe for 4 persons:
1 kg peeled floury potatoes
1 garlic clove
200 g crème fraîche
100 g butter
300-400 g Tomme de Savoie
salt and black pepper from the mill
Boil the potatoes with a little salt as for a mashed potatoes, drain, evaporate and mash with a potato masher. Pass through a fine sieve as desired.
Peel the garlic and press it through a garlic press. Stir in crème fraîche and butter. Stir the cheese in thin slices with a wooden spatula under the puree until the aligot pulls threads. Season to taste with salt and pepper, serve immediately
